Homemade Shanghai Wonton



 Wonton is one of Chinese tradtional cuisine same like the Shrimp Dumpline
 (Xiaojiao), based on the different shapes and fillings,  there are variation of
wontons in each China area, for example: Sichuan, Ninbo, Shanghai, Guangdon etc.

Because of my preference, I like Shanghai
wontons much more than others. Last sunday
 I went to china town to get all of staff and
made a lot of wontons. After backed home,
I was making wontons with roomates while
listening the music in the kethen. It is really
relaxing !

As you can can , the methods to make wontons is very simple ,whatyou need
 to do is just to prepare all of gredients first : shreded pork, slices of  vegetable
,green onion and the thin peel. Then, mix all of gredients together and put a
proper fillings inside the peel. In order to make the peel wrap the fillings in a
beautiful shape so that not to spill out when cook, you need make sure to make
 the peel stick by using water. Finally, after finish the making process, you can
put wontons into the boiled water to cook and served with slices of fried egg
 as a meal !

Soup of needle mushroom and northern shrimp

      
     In chinese cooking tradition, soup with variety  ingredients has different property, some has magic effect for life long and beauty, others has healing effect of preventing disease.


    Today , I would like to introduce one kine of my favorite soup , which ismade of needle mushroom and northern shrimp. Mushroom is a natural cooking resouce , it not only taste good but also has many fantastic effect for health.


         Research show that eating this mushroom can destroy 95% cancer cells in  our body by boosting our immune system, and consuming this kind of mushroom,  can trigger the nultiplication of our healthy "defensive"cells. In addition,this particular kind of mushroom is greatly good for hign blood pressure and obese people .


Ingredients:  
Pandaius Borealis, Needle Mushroom, Baby Choy Sum, Ham,
Garlic and Red chili.

Seasoning: 
Olive Oil, Salt, Chicken Soup, Shaoxing Wine, Pepper

Instruction:
1Defrost the nothern shrimp, then add shaoxing wine
  and pepper.
2Cut the old part of needle mushroom, clean it up;
  slice the red chili ,preserved egg and ham to piece ;
  Peal garlic off.
3Add a little Olive oil into the pan, then put garlic
  and preserved egg into it and stir-fry till these
  ingredients to half cooked.
4Add the chicken soup and turn the oven into high level
   till the soup boil, then turn into warm to stew the
   chick soup while add ham slice and a little bit salt.        

5Add needle mushroom into the pot to boil.
6Add nothern shrimp into the pot to boil about 3 minutes.
7,Add the baby choy sum to boil 5 minute and turn off the oven.

Low Fat Food !!!

I enjoy delicious food very much and would like to recommend variety of cuisine as much as possible
by means of my blog. In some way , food is much more than its basic function to feeding our stomach,
most of time , what kinds of food you like most can convey your personality, your taste of life etc.
One of my favorite food is low fat food because it is good for health and we can escape from heart desease
and too much weights . I found friends with same interests within Facebook . Here is one of their response

Nancy Sammour hello guys i am interrested in this group i hope we share recepies i just wanted to say to zahr if you want a dressing for a salad try balsamic vinegar alone i use it without oil and you can always use yogurt for a dressing.


Ramona Boulos Khoury I have added 2 topics that is the Low Fat Salads and Sea Food, since i don't like meat and rarely i eat the chicken breast, to add to it, i'm gluten-free person Yakhkkk...
But it is ok, i am managing.

Chinese Shrimp Dumpling


Do you know how to make shrimp dumplings? If you answered no, don’t worry, you are not alone. Many people enjoy them, but very few people know how to properly prepare them. But don’t you worry, all you have to do is follow this easy recipe, and you will be enjoying delicious dumpling in no time.   



You will need the following ingredients:
  • 12 oz shrimp deveined, peeled and minced
  • 1 cup cabbage chopped

Instructions:
  1. Peel and devein the shrimp. Cut the shrimp into 1/2-inch segments. Mix with the rest of the filling ingredients and set aside.
  2. In a bowl, mix all the dry ingredients for the dough. With wooden chopsticks, stir in the boiling hot chicken broth and the vegetable oil.                                            
  3. Sprinkle wheat starch over a wooden cutting board or other appropriate kneading surface. When the dough is still hot, start kneading the dough until it becomes smooth. If the dough is sticky, you may need to add more wheat starch.
  4. Cut the dough into 4 sections and roll each section into an 8-inch cylinder, using the palms of your hands. For this recipe, cut each cylinder into 8 pieces. Cover with plastic to keep the dough moist while you flatten each piece.                                                                         
  5. The trick to making the wrapper into a near-perfect circle is to sandwich the piece of dough between two pieces of parchment paper and flatten it using the bottom of a pan. Then you can use a rolling pin to roll them out more. You want your wrappers to be at least 3 1/2" wide.
  6. Fold 8 narrow pleats, where each pleat overlaps the previous pleat halfway. You should leave about 1/3 of the edge without pleats. 
  7. While avoiding the edges of the dough, use a small spoon to place a teaspoon of filling into the center of the wrapper.
  8. Press the edges of the dough together, forming a half circle. Put it on your working surface, pressing the bottom of the dumpling. Fill the remaining wrappers until you have about 32 dumplings. 
  9.                
  10. Using a steamer, cook the dumplings over high heat for 7 minutes. Remove the steamer from the heat and let the dumplings settle for 3 minutes before moving them. Serve dumplings hot.


    Notes: There are two main types of sesame oil: Cold-pressed sesame oil and toasted sesame oil. Cold-pressed sesame oil has a light yellow color while toasted sesame oil is dark brown.
